I wanted to share with you one of my favourite go to meals which is quick and easy, tastes great and is wonderful at perking you up after a work out.
This recipe gives you quantities for two people so its easy enough to mutilply up if making this for more. It usually takes me about 20 – 25 minutes to cook depending on the pasta I use.
- 160g Pasta
- 4 Low Fat Sausages (I use these but use what work’s best for you)
- 1 Can of Chopped Tomatoes
- 1 Tablespoon of Honey
- 1 Tablespoon of Tomato Puree
- 1 Teaspoon of Lazy Chilli
- Pinch of Oregano and Basil
First off put the pasta on to cook in a pan of boiling water, followed by grilling the sausages. I tend to do this under the oven grill but if you have a George Foreman grill this works just as well.
While the pasta and sausages are cooking you need to make the tomato sauce. Start by emptying the can of tomatoes into a saucepan and start to reduce this down on a medium heat. Add in the honey, puree, chilli and herbs and mix. I use dried herbs in this case but fresh can work just as well if they are chopped small. More chilli can also be added to your preferred taste.
Once the sausages are cooked take them off the heat and slice into small pieces, scissors and a fork are very useful for this!
Once the sauce is reduced to a relavitely thick consistency take it off the heat and mix in the cooked sausage.
Serve the pasta into a bowl and add the spicy tomato sausage mix on top and viola! Spicy sausage pasta in a matter of minutes without any fuss. Great at replenishing the gap made by exercise, or if having a quick and easy meal with friends, and healthy to boot.
You can mix this recipe up by adding veggies, I have found peppers and courgettes work very well, and of course it can easily be made vegetarian by substituting the sausages for vegetarian ones, or just using vegetables instead!
