Hi All,

I wanted to quickly share with you a recipe I found for a really tasty lunch if you  like Thai food. This is so quick and easy I couldn’t not give it a go. Its very low in fat and tastes great!

Serves: 4

Fat Content: 1.9 grams (per 100g)

Calories: 208 (per serving)

You will need:

  • 180g pasta shapes
  • 1 veggie stock cube
  • 4 sundried tomatoes
  • 1 small red onion
  • 1 garlic clove
  • 4 baby courgettes, sliced
  • 100g baby asparagus, chopped
  • 60g peas, defrosted
  • 50g drained artichokes
  • 1 teaspoon Thai paste (I used green Thai curry paste)


Cook the pasta in a pan of boiling water with the stock cube and sundried tomatoes. In a pre-heated pan dry fry the onion, garlic, courgettes and asparagus until soft. Drain the pasta, take out the sundried tomatoes and slice. Add the pasta and sundried tomatoes to the vegetables that you have been cooking, adding in the peas, artichokes and curry paste. Season to taste. Garnish (if required) and serve!

This is possible the tastiest, healthy pasta dish I have had in a while, and it keeps quite well for a day or so in the fridge if you are making large quantities to see you through a few days. I must admit I didn’t add artichokes to my version and didn’t miss them, it still tasted great. Perfect if you want a few carbs before a run/gym session!
